Not everyone gets a homemade cheesecake for their birthday. Chris did — made by his dad. That's where this recipe started, and that's why it's on the menu.
Our Basque cheesecake is a two-day process. A blend of four cheeses, cream, and buttermilk, slow-cultured for an additional 36 hours to build real depth of flavour, then finished at 500°F to create the perfect crust while the inside stays impossibly creamy.
Beneath it all, a thin graham crumb base — our signature touch that adds just the right amount of crunch.
It's not a quick bake. But then again, Dad never took shortcuts either.
Dad's still the inspiration. Chris just has a bigger oven now.
